Attention Atkins fans and diabetics! Tired of paying top-dollar for small bottles of low-carb, sugar-free pancake syrups that don’t really taste very good anyway? Here’s a syrup recipe that my DH (Dear Husband) really enjoys! This recipe offers a delicious low-carb alternative to traditional pancake syrups, with the added bonus of being easy to prepare at home. Plus, you can adjust the thickness according to your preference! If you’re feeling adventurous, you can even switch up the flavors by substituting other extracts for the maple and vanilla.

Ingredients:
- 1 1/2 cups Splenda granular
- 1 1/2 cups water
- 1 tablespoon cornstarch
- 1-1 1/4 teaspoons vanilla extract
- 1/2 teaspoon maple extract
Instructions:
- In a small bowl, mix the cornstarch with 1/4 cup of water until dissolved, creating a slurry.
- In a saucepan over medium-high heat, combine all remaining ingredients.
- Bring the mixture to a boil, stirring constantly with a whisk.
- Once boiling, slowly add the cornstarch slurry while continuing to whisk.
- Allow the mixture to boil for 30 seconds.
- Remove the saucepan from heat and let the syrup cool.
- Once cooled, transfer the syrup into a bottle and refrigerate.
- Pro tip: If you prefer a thicker syrup, you can increase the amount of cornstarch to 5-6 teaspoons. Keep in mind that the syrup will thicken more as it cools, so be cautious not to over-thicken it.
