This recipe, which I received from my dear friend Mabel many years ago, has become a cherished favorite. These cookies are delightfully simple to make, offering both a sweet and hearty flavor. The best part is that you can prepare the dough ahead of time, freeze the logs, and bake them fresh whenever you like. This makes them an ideal treat for last-minute gatherings or when you’re craving a warm homemade cookie but don’t have the time to mix and bake from scratch. Be sure to plan ahead for the chilling time, as it’s not reflected in the preparation steps.

Instructions:

  1. Cream the butter and sugars: In a large mixing bowl, combine the butter, brown sugar, and white sugar. Beat them together using a hand mixer or stand mixer until the mixture is smooth and creamy. This will form the base of your dough, so make sure the ingredients are well combined.

  2. Add the eggs and vanilla: Crack the eggs into the creamed butter and sugar mixture, then add the vanilla extract. Beat the ingredients together until fully incorporated, creating a soft, smooth batter.

  3. Incorporate the dry ingredients: Stir in the salt, baking soda, and all-purpose flour. Mix everything until well combined. The dough should be thick and slightly sticky at this point.

  4. Add oatmeal: Gradually add the oatmeal to the dough, stirring to combine. The oatmeal gives these cookies their signature chewy texture, so make sure it’s evenly mixed throughout the dough.

  5. Shape the dough: Take portions of the dough and roll them into 4 round logs. Make sure the logs are uniform in size, as this ensures even baking. If the dough feels too sticky to handle, you can chill it slightly before shaping.

  6. Wrap and chill: Wrap the shaped dough logs tightly in wax paper or plastic wrap and refrigerate for at least 1 hour. Chilling the dough helps to firm it up, making it easier to slice into perfect cookies.

  7. Slice and bake: Preheat your oven to 350°F (175°C). Once the dough has chilled, remove it from the fridge and slice the logs into 1/4-inch thick rounds. Arrange the cookie slices on a baking sheet lined with parchment paper or a silicone baking mat, spacing them about 2 inches apart.

  8. Bake the cookies: Place the baking sheet in the preheated oven and bake the cookies for approximately 10 minutes, or until they are lightly golden around the edges. Keep an eye on them, as baking times may vary depending on your oven.

  9. Optional variations: For a fun twist, you can add 1 cup of your favorite mix-ins. Try adding coconut, chopped nuts, raisins, or even chocolate chips for an extra touch of flavor and texture. These additions will elevate your cookies and make them uniquely your own!

Once baked, allow the cookies to cool on a wire rack before serving. Enjoy them with a glass of milk, or store them in an airtight container for later indulgence. These Dad’s Cookies are sure to become a staple in your baking repertoire!

Feel free to share this recipe with friends and family—it’s perfect for any occasion, whether you’re looking for a quick dessert or planning to impress at your next gathering. And remember, you can make these ahead of time by freezing the dough, so you always have freshly baked cookies at the ready!
