Instructions

Step 1: Prepare the Couscous

  1. In a large bowl, place the couscous. Season it with 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of ground turmeric for added flavor and color.
  2. Bring 300g of water to a boil in a separate pan. Once the water is boiling, pour it over the couscous in the bowl.
  3. Cover the bowl with plastic wrap or a lid, and let the couscous steam for about 5-7 minutes. Once done, fluff the couscous with a fork to separate the grains. Set it aside.

Step 2: Cook the Mackerel

  1. Begin by cleaning the mackerel. Rinse it under cold water, remove the entrails, and cut along the spine to remove the bones.
  2. Heat a grill or cast-iron pan and cook the mackerel fillets skin-side down for about 3 minutes. Then, flip the fillets and cook for another 2 minutes on the other side.
  3. Allow the fish to cool slightly before flaking it into bite-sized pieces. Add the cooked mackerel to the couscous.

Step 3: Prepare the Apples

  1. Wash the apples, remove the cores, and slice them into thin wedges. Cut each wedge into 1 cm cubes.
  2. Place the diced apples into a bowl and drizzle with lemon juice to prevent browning. Set them aside.

  3. Drizzle in about 100g of extra virgin olive oil and stir everything together until well combined.
