Ayam Bumbu Hitam Madura (Madura-style Black Spiced Chicken)
Ingredients:

- 1 whole chicken, cut into pieces
- 10 shallots
- 5 garlic cloves
- 25 red bird’s eye chilies
- 10 candlenuts
- 1 thumb-sized piece of ginger
- 1 thumb-sized piece of turmeric
- 1 cm of kencur (aromatic ginger)
- Spice Mix:
- 2 stalks lemongrass, bruised
- 5 kaffir lime leaves
- 1 thumb-sized piece of galangal, bruised
- 5 tamarind pods
- Sugar, to taste
- Salt, to taste
- Water
- Cooking oil
Instructions:

Pre-Cook the Chicken:
Begin by boiling the chicken pieces in water until they are about halfway cooked. Remove from the pot, drain, and set aside. Make sure to save the chicken broth for later use; you might need it to adjust the consistency of your dish. -
Fry the Chicken:
Heat oil in a pan and fry the chicken pieces until they are golden brown. Remove from the pan and set aside. -
Prepare the Spice Paste:
In a blender, combine the shallots, garlic, red bird’s eye chilies, candlenuts, ginger, turmeric, and kencur. Blend until you have a smooth paste. -
Sauté the Spice Paste:
Heat some oil in a wok or large pan over medium heat. Add the spice paste and sauté until it becomes aromatic and fragrant. -
Add the Spice Mix:
Once the paste is fragrant, add the lemongrass, kaffir lime leaves, and galangal. Stir well to combine. -
Season the Dish:
Add sugar and salt to taste. Adjust the seasoning according to your preference. -
Simmer the Chicken:
Pour a small amount of water into the pan to create a sauce base. Add the fried chicken pieces to the pan, ensuring they are well-coated with the spice mixture. The chicken should be somewhat submerged in the sauce. -
Cook and Stir:
Simmer the chicken over medium heat, stirring occasionally. Continue cooking until the sauce darkens to a rich black color. The deeper the color, the more flavorful the dish will be. -
Serve:
