Tamarind Paste 2 tsp
Sugar 1/2 tsp

Instructions

  1. Prepare the Ingredients: Start by finely chopping the onions and tomatoes. Set them aside.
  2. Cook the Spices: In a frying pan or kadai, heat the sesame oil over medium heat. Add the dry red chilies, onions, and tomatoes to the hot oil. Cook for about 5 minutes until the vegetables soften and blend together. Once done, remove from heat and let it cool.
  3. Grind the Mixture: Once the mixture cools down, transfer it to a blender or food processor. Add 2 tablespoons of water to make the grinding process smoother and blend everything into a fine paste. Set this paste aside.
  4. Tempering: In the same frying pan, heat some more sesame oil. Add mustard seeds and let them splutter. Then, add the urad dal and curry leaves. Cook them until the urad dal turns golden brown, stirring occasionally.
  5. Combine the Paste: Now, add the prepared tomato and onion paste into the frying pan. Add some more water to adjust the consistency as per your preference. Stir well and bring the chutney to a simmer.
  6. Season the Chutney: Once the chutney begins to boil, add the tamarind paste, salt, and sugar. Stir well, letting the chutney cook for another 2-3 minutes until the flavors meld together.
  7. Serve: Turn off the heat, and your Madurai Spicy Tomato Chutney is ready to serve! This chutney pairs perfectly with idli, dosa, or any other South Indian snack. It can also be served with rice for a flavorful side dish.
