Slow Cooker Hoppin’ John Recipe
Description: Every New Year’s Day for about five years, I sent this out to the Maintenance men at the Magic Kingdom at Walt Disney World, along with a big pan of cornbread, and the slow cooker always came home empty! It’s considered good luck for New Year’s.

Ingredients:
- 3 cans black-eyed peas
- 1 onion
- 1 carrot
- 3/4 cup celery
- 3/4 cup ham, diced
- 3/4 cup chicken broth
- 1 teaspoon dried thyme
- 2 teaspoons red pepper flakes
- 1/2 cup rice
- Collard greens
Instructions:

In a 5 to 6 quart slow cooker, layer the ham, carrots, onion, and celery as the first layer.

Add the black-eyed peas and collard greens as the second layer.

Mix the spices (dried thyme and red pepper flakes) in the chicken broth, then pour over all ingredients in the slow cooker.

Cook on low for 8 to 10 hours, depending on your slow cooker.
