Onion 2, finely chopped

Turmeric Powder 1 teaspoon
Red Chilli Powder 1 teaspoon
Sambar Powder 1 teaspoon
Salt To taste
Oil As needed

Preparation Time: 10 minutes

Cooking Time: 30 minutes

Total Time: 40 minutes

Instructions

  1. Prepare the Masala:
Start by combining the onions, green chilies, ginger garlic paste, turmeric powder, red chili powder, sambar powder, and salt in a large mixing bowl. Using your hands, mix all the ingredients together, ensuring that the spices coat the onions and chillies evenly, forming a fragrant masala paste.

  2. Heat the Oil:
Heat a saucepan over medium flame and add enough oil to coat the bottom of the pan. Allow the oil to heat up, then add the prepared masala paste into the pan.

  3. Cook the Masala:
Let the masala cook on high heat for about 2 to 3 minutes. You should notice the onions turning slightly translucent and the spices releasing a beautiful aroma.

  4. Add the Potatoes:
Once the masala has cooked for a few minutes, add the sliced potatoes to the pan. Stir well to coat the potatoes with the masala mixture.

  5. Cook the Potatoes:
Lower the flame and let the potatoes cook for about 20 to 25 minutes, stirring occasionally. You can cover the pan to speed up the cooking process. Cook until the potatoes are tender and have absorbed the flavors of the spices.

  6. Serve:
Once the potatoes are fully cooked, remove the pan from the heat. Maharashtrian Aloo Bhujane is now ready to be served. Serve it hot with a side of daal tadka, rice, or roti for a complete meal.

Tips:

  • For added depth of flavor, you can sprinkle some fresh coriander leaves on top before serving.
  • If you prefer a slightly crispy texture for your potatoes, cook them on a low flame for a bit longer.
  • You can adjust the level of spiciness by adding more or less green chili or red chili powder according to your taste.

Enjoy this hearty and comforting dish that brings the heart of Maharashtra into your kitchen. The warm, spiced potatoes combined with the aromatic masala make it an unforgettable part of any meal.
