Cumin seeds (Jeera) 1/2 teaspoon
Mustard seeds (Rai/Kadugu) 1 teaspoon
Asafoetida (Hing) 1/4 teaspoon
Turmeric powder (Haldi) 1/4 teaspoon
Salt To taste

For Roasting

Roasted Peanuts (Moongphali) 1/4 cup
Sesame seeds (Til seeds) 1/4 cup

For Garnishing

Fresh Coriander (Dhania) Leaves Handful, finely chopped

Instructions

  1. Preparation: Start by preparing all the vegetables. Peel and dice the carrots, potatoes, and brinjal (eggplant). Chop the green beans, green chilies, and coriander leaves. Set all ingredients aside.

  2. Roasting the Peanuts and Sesame Seeds: In a small pan, dry roast the peanuts over low to medium heat, stirring occasionally until they are golden and crisp. Remove them from the pan and set aside to cool. Next, roast the sesame seeds in the same pan until they begin to crackle. Remove them from the heat and allow them to cool. Once cooled, grind both the peanuts and sesame seeds together into a coarse powder. Set this roasted powder aside.

  3. Spices and Tempering: Heat a tablespoon of oil in a wok or large frying pan over medium heat. Once the oil is hot, add the mustard seeds and cumin seeds. Allow them to crackle and pop for a few seconds, releasing their flavor. Then add the finely chopped green chilies, asafoetida (hing), Maharashtrian Goda Masala, and turmeric powder. Sauté these spices for another 30 seconds, being careful not to let them burn.

  4. Cooking the Vegetables: Add the diced potatoes, brinjal, carrots, and broad beans to the pan. Stir well, allowing the vegetables to mix thoroughly with the spices. Let them sauté for 4-5 minutes so that they absorb the spices. Add salt to taste, and sprinkle some water over the vegetables. Cover and let them cook for about 10-12 minutes, until the vegetables are partially cooked.

  5. Adding Fresh Peas and Cooking Through: Once the vegetables are partially cooked, add the fresh green peas and continue to cook covered until all the vegetables are fully tender. If the vegetables start sticking to the pan, add a little water to prevent burning and help the cooking process. The water will also create steam, ensuring that the Bhogichi Bhaji cooks faster.

  6. Final Touches: Once the vegetables are cooked through, add the optional ber (dry berries), along with the roasted peanut-sesame powder. Stir gently to combine, ensuring the powder is evenly distributed throughout the vegetables. Let the Bhogichi Bhaji cook uncovered for an additional 2-3 minutes to allow the flavors to meld together.

  7. Garnishing: Check the seasoning and adjust the salt and spice levels to your preference. Once done, garnish with finely chopped coriander leaves and a squeeze of fresh lemon juice.

  8. Serving: Serve this hearty Bhogichi Bhaji hot with Multigrain Bhakri or Bajra Til Bhakri, a dollop of fresh homemade ghee or butter on top, and steamed rice for the perfect Maharashtrian meal.
