Instructions

  1. Roast the Nuts and Dalia
    Start by heating the ghee in a large saucepan over medium heat. Add the chironji (or any nuts of your choice) to the pan. Sauté for about 1 minute until fragrant and lightly toasted. Remove the nuts from the pan and set them aside on a plate. In the same pan, add the broken wheat (dalia). Stir it well and roast the dalia for 3-4 minutes, until it releases a fragrant aroma. Remove the pan from the heat and allow the dalia to cool slightly.

  2. Cook the Dalia and Rice
    In a pressure cooker, combine the roasted dalia, soaked rice, and 2 1/2 to 3 cups of water. Close the lid and cook for about 3 whistles, then reduce the heat and simmer for 10 more minutes. Once done, turn off the heat and allow the pressure to release naturally. The dalia and rice mixture should be soft and tender, resembling a creamy porridge.

  3. Prepare the Kheer Mixture
    In the same saucepan used earlier, add the cooked dalia-rice mixture, grated fresh coconut, and jaggery. Place the pan on medium heat and stir constantly to help the jaggery dissolve completely into the mixture. If needed, add a little water to adjust the consistency. Continue stirring until the kheer becomes smooth and begins to thicken, about 5-7 minutes.

  4. Add Saffron and Nutmeg
    In a small bowl, soak the saffron strands in a tablespoon of warm milk to release their color and flavor. Add the saffron milk and the nutmeg to the kheer, stirring gently to incorporate the flavors. Allow the kheer to simmer for another 5 minutes.

  5. Final Touches and Serving
    Add the milk to the kheer and stir well to create a creamy consistency. Continue to cook the kheer for a few more minutes until it reaches your desired thickness. Once done, remove from heat and add the sautéed nuts. Garnish with slivered almonds (or your preferred nuts like pistachios or cashews).

  6. Serve
