Instructions

  1. Prepare the Slurry: In a mixing bowl, whisk together the buttermilk and rice flour until smooth, ensuring there are no lumps.

  2. Heat the Oil: In a wok or a deep pan, heat the sunflower oil over medium heat. Add the mustard seeds and cumin seeds, allowing them to splutter.

  3. Add Aromatics: Once they begin to splutter, add the curry leaves, chopped green chillies, and asafoetida (hing). Stir briefly to release their aromas.

  4. Boil the Water: Carefully pour in the water, followed by salt and sugar. Bring the mixture to a rolling boil.

  5. Incorporate the Slurry: Gradually add the rice flour mixture while stirring continuously. This prevents lumps from forming.

  6. Cook to Perfection: Lower the heat and keep stirring until the mixture thickens and the rice flour is fully cooked, which should take about 10-15 minutes.

  7. Serve: Turn off the heat and transfer the Ukadpendi to a serving bowl. Drizzle with peanut oil if desired. Serve hot, ideally paired with Lasun Ki Chutney for an extra kick.
