Coriander (Dhania) Leaves – finely chopped 3 tablespoons
Roasted Peanuts (Moongphali) – roughly crushed 1/4 cup
Turmeric Powder (Haldi) 1/2 teaspoon
Mustard Seeds 1 teaspoon
Sunflower Oil 2 teaspoons
Lemon Juice 1 teaspoon
Salt To taste

Instructions

  1. Prepare the Tindora: Begin by washing and drying the tindoras thoroughly. Slice them into small spherical pieces and set aside.

  2. Roast the Peanuts: In a pan, dry roast the peanuts on a slow flame until they turn golden brown. Allow them to cool, then roughly crush them using a mortar and pestle. Set the crushed peanuts aside.

  3. Sauté the Aromatics: In the same pan, heat the sunflower oil over medium heat. Once the oil is hot, add the mustard seeds and let them splutter. Add the finely chopped garlic and green chilli, sautéing until the garlic becomes golden and crispy.

  4. Cook the Tindora: Add the sliced tindora to the pan along with the turmeric powder. Season with salt to taste, and mix well to coat the tindora with the spices. Cover the pan with a lid and cook for 4 to 5 minutes, stirring occasionally. The tindora should soften but retain its crunchy texture.

  5. Add the Peanuts and Coriander: Once the tindora is cooked, add the crushed peanuts and chopped coriander leaves to the pan. Stir everything together until well combined.

  6. Finish with Lemon Juice: Turn off the heat and drizzle the lemon juice over the sabzi. Mix well to incorporate the lemony tang into the dish.
