Instructions:

  1. Prep the Rajma:
    Start by draining the excess water from the cooked rajma (kidney beans). Mash the rajma thoroughly until it’s almost smooth but still slightly textured.

  2. Prepare the Kebabs:
    In a large mixing bowl, combine the mashed rajma with all the ingredients except for the khoya and oil. This includes the finely chopped onions, garlic, ginger, green chillies, coriander leaves, roasted cumin powder, coriander powder, amchur, red chilli powder, garam masala powder, roasted gram flour (sattu ka atta), sugar, and salt. Mix everything well to form a smooth dough-like consistency. Taste the mixture and adjust the seasoning if needed.

  3. Shape the Kebabs:
    Divide the kebab mixture into 15 equal portions (or adjust the size based on preference). Roll each portion into a ball and then flatten them slightly to form round, thick patties.

  4. Cook the Kebabs:
    Heat a skillet or non-stick pan on medium heat. Once hot, place the kebabs on the skillet. Drizzle a little oil over the kebabs and cook them until they are golden brown and crisp on both sides (around 5-6 minutes per side).
