In a mixing bowl, combine the thinly sliced onions, tomatoes, pounded ginger, pounded garlic, red chilli powder, turmeric powder, a pinch of salt, and a few curry leaves with the mutton pieces. Mix everything well to ensure the mutton is coated evenly in the spices. Let this mixture sit for 30 minutes to marinate.

Pressure Cook the Mutton:
- Once the mutton is marinated, transfer it along with the marinade into a pressure cooker. Close the lid and cook for 4 whistles on medium heat. Turn off the flame and allow the pressure to release naturally before opening the lid.

- In a heavy-bottomed pan, heat coconut oil over medium heat. Add a sprig of curry leaves and let them crackle. Then, add the dried red chillies and sauté for a minute.
