Malang-Style Tahu Telor with Spicy Peanut Sauce

Simple Tahu Telor Malang Recipe

Ingredients:

  • 2 large eggs
  • 2 pieces of firm tofu
  • 1 handful of young scallions
  • 1 handful of bean sprouts

For the Peanut Sauce:

  • 1 handful of roasted peanuts
  • 2 cloves of fried garlic
  • 3 bird’s eye chilies
  • 1/2 teaspoon of shrimp paste
  • Soy sauce, to taste

Instructions:

  1. Prepare the Tahu Telor:

    • Crack the eggs into a mixing bowl. Add a pinch of salt and black pepper, and whisk gently to combine.
    • Crumble the firm tofu into the egg mixture. You can also cut the tofu into small cubes if preferred.
    • Chop the young scallions and add them to the bowl.
    • Heat a non-stick pan over medium heat and pour in a little oil. Once hot, pour the egg-tofu mixture into the pan, spreading it out into a thin layer.
    • Cook until the eggs are set and the tofu is golden brown, then flip to cook the other side if needed. Once cooked through, remove from the pan and set aside.
  2. Prepare the Peanut Sauce:

    • In a mortar and pestle or a food processor, grind together the bird’s eye chilies, fried garlic, and shrimp paste.
    • Add the roasted peanuts and continue to grind until the mixture is finely blended. Add a little water as needed to achieve a smooth, pourable consistency.
    • Stir in soy sauce to taste, adjusting the flavor as needed.
  3. Serve:

    • On a serving plate, place a portion of steamed rice.
    • Slice the cooked tahu telor into pieces and place on top of the rice.
    • Generously pour the peanut sauce over the tofu and egg mixture.
    • Top with lightly blanched bean sprouts and garnish with additional chopped scallions and fried shallots if desired.
