Ingredients:

  • 1/2 cup canola oil
  • 3 tablespoons red wine vinegar

  • 1/2 cup mandarin oranges in juice, drained
  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 2 cups romaine lettuce, torn into bite-size pieces
  • 1/2 cup slivered almonds

Instructions:

  1. Prepare the Lettuce:
    Tear the romaine lettuce into bite-size pieces and set aside in a large salad bowl.

  2. Make the Dressing:
    In a small bowl, combine the canola oil, red wine vinegar, lemon juice, white sugar, salt, and dry mustard. Whisk the ingredients together until well combined. Alternatively, you can use a food processor to blend the ingredients into a smooth dressing.

  3. Candy the Almonds:
    In a nonstick frying pan, melt the butter over low to medium-low heat. Add the brown sugar to the melted butter and stir until combined. Once the mixture is bubbling, add the slivered almonds, stirring constantly to coat them in the buttery sugar mixture. Continue to cook the almonds until they are lightly browned and have a candied coating. Remove the almonds from the pan and allow them to cool.

  4. Assemble the Salad:
    Just before serving, add the drained mandarin oranges and candied almonds to the bowl of romaine lettuce. Pour the prepared dressing over the salad ingredients.

  5. Toss and Serve:
    Gently toss the salad until all the ingredients are evenly coated with the dressing. Serve immediately to enjoy the crispness of the lettuce, the sweetness of the oranges, and the crunch of the candied almonds.
