  2. Knead Dough:

    • When the dough is cool enough to handle, knead it for an additional 10 minutes until smooth and soft. If using a mixer, this step may be skipped.
  3. Rest the Dough:

    • Cover the dough and let it rest for 30 minutes to relax the gluten.
  4. Divide and Roll:

    • Roll the rested dough into a cylindrical shape and cut it into 10 equal pieces. Keep them covered with plastic wrap to prevent drying out.
    • Take one slice at a time and cut it into two equal pieces. On a lightly floured surface, roll each piece into a 3-inch circle.
  5. Brush with Sesame Oil:

    • Brush one side of one of the 3-inch circle pancakes with sesame oil, ensuring the oil is spread right to the edge.
  6. Layer and Roll Out:

    • Place the second 3-inch piece on top of the first and roll both pieces out into a pancake about 7 inches across, ensuring they are very thin. Cover each pancake with plastic wrap as it’s made.
