Instructions
Step 1: Prepare the Mangoes
- Wash the ripe mangoes thoroughly under running water to remove any impurities.
- Gently peel the mangoes with your hands, allowing some pulp to remain on the peels. This leftover pulp will be used to enhance the flavor.
Step 2: Extract Mango Pulp Water
- Place the peeled mangoes in a medium-sized saucepan.
- Collect the peels in a separate bowl and add about 1/4 cup of water to them.
- Squeeze the peels firmly using your hands to extract as much of the pulp as possible into the water.
- Transfer this extracted pulp water to the saucepan containing the peeled mangoes. Repeat the process until the water runs clear.
Step 3: Cook the Mangoes
- Add the slit green chillies to the mangoes in the saucepan.
- Heat the saucepan over medium heat and bring the mixture to a gentle boil.
- Once it reaches a boil, reduce the heat and let it simmer for 10–15 minutes or until the mangoes become soft and cooked through.
Step 4: Add Sweetness and Flavor
- Stir in the powdered jaggery and a pinch of salt.
- Adjust the sweetness and saltiness based on the natural taste of the mangoes.
- Simmer the mixture for an additional 5 minutes to allow the flavors to meld beautifully.
Optional: For a thicker gravy, prepare a slurry of 2–3 teaspoons of rice flour mixed with 1/4 cup of water. Add this slurry to the boiling curry and cook until the desired consistency is achieved.
Step 5: Temper the Curry
- In a small pan, heat the ghee or coconut oil over medium heat.
- Once the ghee is hot, add mustard seeds and let them splutter.
- Add the dry red chillies, white urad dal, and a pinch of hing. Stir for a few seconds until aromatic.
- Pour this sizzling tempering mixture into the mango curry and stir well.
