Instructions:

1. Marinating the Mutton:

Start by marinating the mutton. In a large mixing bowl, combine the mutton with curd, turmeric powder, salt, and lemon juice. Use your hands to massage the marinade into the mutton, ensuring it is evenly coated. Let the mutton marinate for at least 30 minutes, but for the best results, marinate overnight in the refrigerator to allow the flavors to fully penetrate the meat.

2. Making the Ghee Roast Masala:

  • Heat a skillet over medium heat and add dry red chillies, black peppercorns, cloves, methi seeds, coriander seeds, and cumin seeds. Dry roast these spices for about 4-6 minutes, or until the spices release their aromatic fragrance.
  • Turn off the heat and allow the roasted spices to cool.
  • Once cooled, transfer the roasted spices into a mixer jar. Add garlic cloves and tamarind paste, and grind everything into a smooth paste. You may add a little water to facilitate the grinding process.

  • In a pressure cooker, add the marinated mutton along with 1/4 cup of water. Close the lid and cook for about 3-4 whistles or until the mutton is approximately 80% cooked. Turn off the flame and let the pressure release naturally.

4. Preparing the Ghee Roast:

  • Heat a kadai or deep pan over medium heat and add ghee. Allow the ghee to heat up.
  • Once the ghee is hot, add the curry leaves and let them splutter in the ghee, releasing their aroma.
  • Next, add the freshly ground ghee roast masala to the ghee and cook for about 4-6 minutes, stirring occasionally. The ghee should start to separate from the masala as it cooks.

5. Finishing the Mutton Ghee Roast:

  • Add the pre-cooked mutton to the ghee roast masala, along with 1/4 cup of the stock from the pressure cooker. The consistency of the dish should be thick, so avoid adding too much stock. If you prefer a gravy, you can add more stock to adjust the consistency.
  • Stir in the jaggery and adjust salt according to your taste. Cover and cook on low heat for about 8-10 minutes, allowing the flavors to blend and the mutton to cook fully.
  • Once done, turn off the flame and check the seasoning. Adjust the salt and spices to taste.

6. Serving:

  • Transfer the Mutton Ghee Roast to a serving dish and serve hot. This dish pairs wonderfully with Ghee Roast Dosa or Cucumber Neer Dosa for a traditional Mangalorean meal.
