Padpe Uppukari – Harive Soppu Palya Recipe (Spinach and Coconut Stir-Fry)

This traditional Mangalorean side dish, Padpe Uppukari, also known as Harive Soppu Palya, is a delightful way to prepare spinach in a fragrant mix of coconut, garlic, and spices. Perfect as an accompaniment to steamed rice, it pairs wonderfully with Dali Thoy (a toor dal curry) and Cabbage Palya for a comforting meal.

Instructions

  1. Prepare the Tadka (Tempering):
    Begin by heating a tablespoon of oil in a kadai or skillet over medium heat. Once hot, add the mustard seeds and let them splutter to release their aroma. Then, add the white urad dal, and as it turns golden, add a pinch of asafoetida (hing), dry red chilies, and the curry leaves. Stir and let the curry leaves crackle for a few seconds.

  2. Sauté the Aromatics:
    Add the finely chopped garlic and onions to the pan. Sauté until the onions soften and turn translucent, creating a flavorful base.

  3. Cook the Spinach:
    Add the finely chopped spinach leaves to the kadai, mixing well. Sauté the spinach until it wilts and is cooked through, stirring occasionally to ensure even cooking.

  4. Add the Coconut and Seasoning:
    Once the spinach is tender, sprinkle the grated coconut over the mixture. Season with salt to taste, and stir everything together to blend the flavors. Let the coconut warm up in the pan for about 1 minute.

  5. Taste and Adjust Seasoning:
    Check the seasoning and adjust if necessary. Then turn off the heat.

  6. Serve:
    Transfer the Harive Soppu Palya to a serving bowl and enjoy it warm. It pairs beautifully with steamed rice, Dali Thoy (Karwar-style toor dal curry), and Cabbage Palya for a wholesome meal.
