Instructions:

For the Mango Donut Cake:

  1. Preheat the Oven: Begin by preheating the oven to 180°C (350°F). Grease your donut pan with a light coat of oil or line it with butter paper for easy removal.

  2. Prepare Dry Ingredients: In a medium-sized bowl, sift together Vivatta Maida (flour), baking powder, baking soda, and salt. Set aside.

  3. Mix Wet Ingredients: In a large mixing bowl, combine mango pulp and sugar. Stir well until the sugar dissolves completely into the mango puree.

  4. Add Oil and Vanilla: Add the oil and vanilla extract to the mango-sugar mixture, and mix thoroughly to combine.

  5. Combine Wet and Dry Ingredients: Gradually fold the dry flour mixture into the wet mango mixture, stirring gently. Keep folding until you achieve a smooth, thick batter.

  6. Fill the Donut Pan: Spoon the batter evenly into the donut pan, filling each slot to about ¾ full. Ensure that the batter is spread evenly for uniform baking.

  7. Bake the Cake: Place the filled pan in the preheated oven and bake for approximately 25 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
