Instructions

1. Prepare the Mango Sauce
Start by preparing the mango sauce. Peel the ripe mango with a smooth-edged knife and set it aside. Next, peel the fresh ginger and grate it finely into a tall, narrow container. Add the mango to the container along with a drizzle of extra virgin olive oil, a pinch of salt, and freshly cracked black pepper. Using an immersion blender, blend the ingredients until you achieve a smooth, creamy consistency. Set aside.

2. Prepare the Stuffing for the Rolls
For the stuffing, cut the homemade bread into small cubes. Zest the lemon and add it to the bread cubes. Also, add a dash of extra virgin olive oil, a pinch of salt, and black pepper. Blend the mixture until it forms fine, uniform crumbs. This will be the filling for your swordfish rolls.

3. Assemble the Swordfish Rolls
Take the swordfish fillets and place them on a flat surface. Spoon about one tablespoon of the prepared bread mixture onto each fillet, spreading it evenly across the surface.
