Instructions

  1. Preparation:

    • Preheat your oven to 150°C (300°F) and let it warm up for about 10 minutes.
    • Peel and chop the ripe mango. Place the pieces into a blender or food processor, and blend until smooth to create a mango puree. Set aside.
  2. Prepare the Muesli Crumble:

    • In a mixing bowl, crumble the muesli into a coarse texture.
    • Add the whole wheat flour and melted butter to the muesli. Mix until the texture resembles wet sand.
    • Spoon this mixture evenly into the base of a mason jar or small oven-safe ramekins, pressing down lightly to create an even layer.
    • Place the jars or ramekins on a baking sheet and bake in the preheated oven for 10 minutes. Once done, remove from the oven and allow to cool slightly.
  3. Prepare the Greek Yogurt Mango Mixture:

    • In another mixing bowl, combine the mango puree, Greek yogurt (hung curd), honey, and ginger powder. Mix until smooth and creamy.
    • Carefully spoon or pour the mango-yogurt mixture over the baked muesli crust in the mason jars, filling each jar to the brim.
  4. Bake the Cheesecake:

    • Create a water bath by placing the filled mason jars or ramekins into a deep baking dish, then filling the dish with water until it reaches halfway up the jars.
    • Carefully place the baking dish with jars back into the oven and bake for 15 minutes. This gentle baking method will ensure a creamy texture without drying out the yogurt.
  5. Chill and Garnish:

    • After baking, remove the jars from the oven and let them cool to room temperature. Then, refrigerate for at least 30 minutes to allow the cheesecake to set and firm up.
    • Once chilled, garnish each cheesecake with freshly chopped mango and a sprinkle of muesli.
  6. Serve and Enjoy:

    • Serve your Mango Greek Yogurt Cheesecake with Muesli Crumble as a refreshing dessert after a light meal. This dessert pairs wonderfully with dishes like Cauliflower Fried Rice or Soy Chunks Manchurian in Sweet & Spicy Sauce, creating a well-balanced, wholesome, and delightful meal.
