Ingredients:

  • 4 eggs
  • 4 slices of brown bread
  • 1 tsp salt (divided)
  • 1 tsp vinegar
  • 2 tbsp butter
  • 1 tbsp mango chutney

Instructions:

Step Description Time
1 Bring 3 cups of water to a boil in a saucepan.
2 Add 1/2 tsp salt and 1 tsp vinegar to the boiling water.
3 Once the water comes to a boil, carefully add the eggs and boil for 10-12 minutes until hard-boiled. 10-12 minutes
4 Remove the eggs from the saucepan and immediately transfer them to a bowl of cold water to cool.
5 Once cooled, peel the eggs and cut each into quarters lengthwise.
6 Preheat your oven to 350°F (175°C).
7 Spread butter evenly over each slice of brown bread.
8 Spoon mango chutney onto the buttered bread slices and spread evenly.
9 Arrange the egg quarters along the edges of the bread slices, leaving the center empty.
10 Sprinkle grated cheese and chopped onion into the center of each slice.
11 Season with salt and black pepper to taste.
12 Place the assembled toast on a baking sheet and bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly. 5-7 minutes
13 Once done, remove from the oven and garnish with fresh parsley.
