Manoharam Murukku Recipe (South Indian Diwali Special Paruppu Thengai)

Ingredients:

For the Murukku:

  • 3 cups Rice flour
  • 1/2 cup Urad dal flour
  • 3 tablespoons Salted butter
  • 3/4 cup ice-cold water (add more if needed)
  • 1 teaspoon Oil (for greasing)

For the Jaggery Syrup:

  • 1 cup Jaggery
  • 1/4 cup Fresh coconut, diced into small bits
  • 1 1/2 teaspoons Dry ginger powder
  • 2 cups Water

Instructions:

1. Prepare the Murukku Dough:

  • In a large mixing bowl, combine rice flour, urad dal flour, and salt.
  • Add in the salted butter and ice-cold water. Knead well until you achieve a soft, smooth, and malleable dough.
  • Transfer the dough into a murukku press.

2. Fry the Murukku:

  • Heat oil in a medium-sized frying pan or kadai over medium heat.
  • Using the murukku press, squeeze out the dough into small spirals or shapes, directly into the hot oil.
  • Fry the murukkus until golden brown and crispy.
  • Remove them from the oil and drain the excess oil by placing them on a paper towel. Allow them to cool.

3. Prepare the Jaggery Syrup:

  • In a heavy-bottomed saucepan, combine jaggery and water. Heat over medium flame, stirring occasionally until the jaggery dissolves completely.
  • Strain the syrup through a fine strainer to remove any impurities.
  • Return the syrup to the pan, add the coconut bits, and cook on low heat for about 15 minutes.
  • To test if the syrup is ready, take a spoonful of the syrup and drop it into a bowl of water. If it forms a round blob, it’s done.
  • Stir in the dry ginger powder and mix everything well.

4. Combine Murukku and Syrup:

  • Gradually pour the hot jaggery syrup over the fried murukkus, stirring gently to coat them evenly.

5. Serve:

  • Serve the Manoharam Murukku hot, or let it cool completely before storing it in an airtight container.
  • Enjoy this delightful snack with a cup of Kumbakonam Filter Coffee.
