Ingredients:
- 6 medium sweet potatoes
- 2 ripe bananas
- 2 tablespoons unsalted butter
- 1/2 cup maple syrup
- 2 teaspoons ground cinnamon
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- 1 cup pecans
- 1 tablespoon unsalted butter
- 1/2 teaspoon salt
- 1 tablespoon brown sugar
Instructions:
Step | Description |
---|---|
1 | Preheat the oven to 425Β°F (220Β°C). Pierce the sweet potatoes all over with a fork and place them on a baking sheet. Bake for about 1 hour, or until tender. |
2 | In the last 15 minutes of cooking time for the sweet potatoes, place the bananas, with their skins on, on the same baking sheet. Roast them until they are soft and the skins are dark. |
3 | Once the sweet potatoes and bananas are cool enough to handle, peel them and transfer them to a food processor. Pulse until the potatoes are chunky. |
4 | Add 2 tablespoons of butter and the maple syrup to the food processor. Puree until the mixture is smooth. |
5 | Next, add the ground cinnamon, pumpkin pie spice, and salt to the mixture. Puree again until everything is well combined. |
6 | Transfer the sweet potato and banana puree to a shallow baking pan and smooth out the surface with a spatula. |
7 | In a skillet, melt 1 tablespoon of butter over low heat. Add the pecans and sprinkle with salt. Saute the pecans until they are well-coated and fragrant, stirring occasionally, for about 5 minutes. |
8 | Transfer the buttered pecans to a paper towel-lined plate to drain any excess butter. |
9 | Arrange the buttered pecans on top of the sweet potato puree in the baking pan. Sprinkle the pecans with brown sugar. |
10 | Bake the sweet potato puree with buttered pecans at 300Β°F (150Β°C) until heated through, about 20 minutes. |
