Instructions:

For Flan:

  1. Simmer the maple syrup in a heavy medium saucepan over medium-low heat until it reduces to 3/4 cup, approximately 7 minutes.
  2. Stir in the heavy cream and return to a simmer.
  3. In a large bowl, whisk the egg yolks until well blended.
  4. Gradually whisk in the hot cream mixture.
  5. Whisk in the salt and strain the custard into another large bowl.
  6. Cover and chill the custard until cold, for at least 2 hours or up to 1 day.
  7. Preheat the oven to 300°F (150°C).
  8. In a heavy medium saucepan, stir together the sugar, 1/4 cup water, and light corn syrup over low heat until the sugar dissolves.
  9. Increase the heat and boil the mixture without stirring until it turns into a deep amber color, occasionally brushing down the sides of the pan with a wet pastry brush and swirling the pan, about 6 minutes.
  10. Pour the syrup into a 9x5x3-inch nonstick metal loaf pan, tilting the pan carefully to coat the sides. Let it stand for 10 minutes.
  11. Pour the chilled custard into the pan with the syrup.
  12. Place the loaf pan in a large roasting pan and add enough hot water to the roasting pan to come halfway up the sides of the loaf pan.
  13. Cover the roasting pan with foil and pierce the foil all over with a fork.
  14. Bake the flan for 1 hour and 45 minutes.
  15. Increase the oven temperature to 325°F (165°C).
  16. Uncover the flan and bake until it is set around the edges but the center moves slightly when the pan is gently shaken, about 1 hour longer.
  17. Remove the flan from the water bath and transfer it to a rack to cool to room temperature.
  18. Cover and refrigerate the flan overnight to set.

For Maple-Glazed Pears:

  1. Preheat the oven to 375°F (190°C).
  2. In a heavy large ovenproof skillet, melt the butter over medium-high heat.
  3. Arrange the pears, cut side down, in the skillet and cook until browned, about 4 minutes.
  4. Turn the pears onto their second cut side and cook for an additional 4 minutes until browned.
  5. Stir in the maple syrup and bring it to a boil.
  6. Place the skillet in the oven and bake until the pears are tender, about 25 minutes.
  7. Using a slotted spoon, transfer the pears to a plate.
  8. Whisk the crème fraiche and salt into the sauce in the skillet.
  9. Return the pears to the skillet and toss them to coat in the sauce.

Assembly:

  1. Run a sharp knife around the edge of the flan to loosen it.
  2. Invert the flan onto a serving platter.
  3. Surround the flan with the maple-glazed pears and sauce.
