Ingredients:

1 1/2 cups All-purpose flour
1 tsp Baking powder
3/4 cup Butter
6 tbsp Sugar
1/2 cup Pecans (chopped)
3 Eggs
1 cup Milk
1 Lemon (zest of)
1/4 cup Maple syrup
5 cups Icing sugar
6 tbsp Lemon juice
1/2 cup Pecans (chopped, for topping)

Instructions:

  1. Preheat your oven to the desired temperature and grease& line the base of a 9×5 loaf pan with baking/parchment paper.

  2. In a bowl, sift the all-purpose flour and baking powder together.

  3. Cut the butter into the flour mixture and mix until the texture resembles fine breadcrumbs.

  4. Add the sugar and chopped pecans to the flour mixture, and mix well.

  5. In a separate bowl, beat the eggs together with milk and lemon zest.

  6. Stir in the maple syrup into the egg mixture.

  7. Combine the egg mixture with the flour mixture and gently mix until just combined. Be careful not to overmix; the batter should be lumpy.

  8. Pour the batter into the prepared loaf pan, and smooth out the surface.

  9. Bake in the preheated oven for about 50-60 minutes, or until the cake is lightly browned and a toothpick inserted into the center comes out clean.

  10. Once baked, remove the loaf from the oven and allow it to cool in the pan for at least 10 minutes.

  11. After cooling, transfer the loaf to a wire rack to cool completely.

  12. For the icing: In a small bowl, sift the icing sugar and stir in the lemon juice until smooth.

  13. Drizzle the icing over the cooled loaf, then sprinkle the chopped pecans over the icing.

  14. Allow the icing to set, then slice and serve.
