Yield: 18 knots
Ingredients:
- 1/4 cup warm water
- 1 package dry active yeast
- 4 1/4 cups all-purpose flour
- 1/3 cup sugar
- 1/2 cup milk
- 2 tablespoons butter
- 3/4 cup pumpkin puree
- 1/4 cup maple syrup
- 2 eggs
- 1 teaspoon salt
- 3/4 teaspoon ground nutmeg
Instructions:
-
In a large glass bowl, stir together the warm water and yeast until the yeast dissolves.
-
Mix in 1/2 cup of flour and 1 tablespoon of sugar. Cover with plastic wrap and place in a warm spot for 45 minutes to allow the yeast to activate and the mixture to become frothy.
-
In a small saucepan, add the milk and butter. Heat until simmering, stirring constantly until the butter melts completely.
-
Add the pumpkin puree, maple syrup, eggs, salt, nutmeg, and the remaining sugar to the saucepan. Stir well to combine all the ingredients.
-
Pour the pumpkin mixture into the yeast mixture in the large bowl. Mix well.
-
Gradually add enough of the remaining flour to the mixture to make a soft dough. Stir until the dough comes together.
-
On a lightly floured surface, turn out the dough and knead it until it becomes smooth and elastic, adding more flour as needed to prevent sticking.
-
Place the kneaded dough in a greased bowl, cover it, and let it rise in a warm place until it doubles in size, which should take about 1 hour.
-
Lightly grease 2 baking sheets and set them aside.
-
Once the dough has risen, punch it down gently to release any trapped air. Knead it again briefly to remove any remaining air bubbles.
-
Divide the dough into 18 equal pieces. Roll each piece into a 6-inch-long rope and tie it into a knot.
-
Arrange the knots on the prepared baking sheets, leaving some space between each knot. Cover them loosely with a clean kitchen towel and let them rise in a warm place for another 30 minutes, or until they have doubled in size.
-
Preheat your oven to 425Β°F (220Β°C).
-
Once the knots have finished rising, bake them in the preheated oven for about 15 minutes, or until they turn golden brown and are cooked through.
-
Remove the knots from the oven and let them cool slightly before serving.
Enjoy these delicious Maple-Pumpkin Knots warm with a cup of coffee or tea for a delightful autumn treat that’s sure to please your taste buds!
