Yield: 18 knots

Ingredients:

  • 1/4 cup warm water
  • 1 package dry active yeast
  • 4 1/4 cups all-purpose flour
  • 1/3 cup sugar
  • 1/2 cup milk
  • 2 tablespoons butter
  • 3/4 cup pumpkin puree
  • 1/4 cup maple syrup
  • 2 eggs
  • 1 teaspoon salt
  • 3/4 teaspoon ground nutmeg

Instructions:

  1. In a large glass bowl, stir together the warm water and yeast until the yeast dissolves.

  2. Mix in 1/2 cup of flour and 1 tablespoon of sugar. Cover with plastic wrap and place in a warm spot for 45 minutes to allow the yeast to activate and the mixture to become frothy.

  3. In a small saucepan, add the milk and butter. Heat until simmering, stirring constantly until the butter melts completely.

  4. Add the pumpkin puree, maple syrup, eggs, salt, nutmeg, and the remaining sugar to the saucepan. Stir well to combine all the ingredients.

  5. Pour the pumpkin mixture into the yeast mixture in the large bowl. Mix well.

  6. Gradually add enough of the remaining flour to the mixture to make a soft dough. Stir until the dough comes together.

  7. On a lightly floured surface, turn out the dough and knead it until it becomes smooth and elastic, adding more flour as needed to prevent sticking.

  8. Place the kneaded dough in a greased bowl, cover it, and let it rise in a warm place until it doubles in size, which should take about 1 hour.

  9. Lightly grease 2 baking sheets and set them aside.

  10. Once the dough has risen, punch it down gently to release any trapped air. Knead it again briefly to remove any remaining air bubbles.

  11. Divide the dough into 18 equal pieces. Roll each piece into a 6-inch-long rope and tie it into a knot.

  12. Arrange the knots on the prepared baking sheets, leaving some space between each knot. Cover them loosely with a clean kitchen towel and let them rise in a warm place for another 30 minutes, or until they have doubled in size.

  13. Preheat your oven to 425Β°F (220Β°C).

  14. Once the knots have finished rising, bake them in the preheated oven for about 15 minutes, or until they turn golden brown and are cooked through.

  15. Remove the knots from the oven and let them cool slightly before serving.

Enjoy these delicious Maple-Pumpkin Knots warm with a cup of coffee or tea for a delightful autumn treat that’s sure to please your taste buds!
