Ingredients:

Sugar 3/4 cup

Instructions:

Prepare Graham Cracker Crust:

  1. Mix graham cracker crumbs, sugar, and melted butter.
  2. Press the mixture onto the bottom and ½ inch up the side of a 9-inch springform pan.
  3. Bake at 350°F (175°C) for 8 to 10 minutes.
  4. Allow to cool.

Cheesecake:

  1. In a large bowl, combine cream cheese, ¾ cup sugar, sour cream, and 2 teaspoons vanilla. Beat on medium speed until smooth.
  2. Add flour, 1 tablespoon at a time, blending well.
  3. Add eggs; beat well.

Cocoa Mixture:

  1. In a small bowl, combine cocoa and ¼ cup sugar.
  2. Add oil and ½ teaspoon vanilla.
  3. Add 1 ½ cups of the cream cheese mixture; mix until well blended.

Assemble Cheesecake:

  1. Spoon plain and chocolate mixtures alternately into the prepared crust, ending with dollops of chocolate on top. Gently swirl with a knife for a marbled effect.

Baking:

  1. Bake at 450°F (230°C) for 10 minutes; do not open the oven door.
  2. Decrease the temperature to 250°F (120°C) and continue to bake for 30 minutes.
  3. Turn off the oven.
  4. Leave the cheesecake in the oven for 30 minutes without opening the door.
  5. Remove from oven.
  6. Loosen cake from the side of the pan.
  7. Cool completely.
  8. Chill thoroughly before serving.
