Recipe Instructions:

  1. Prepare the Vegetables:

    • Bring 5 cups of water and 2 teaspoons of salt to a boil in a large saucepan.
    • While waiting for the water to boil, wash the green beans and asparagus. Trim the ends of the beans.
    • Add the beans to the boiling water, cover, and cook for 8-12 minutes until tender. Then, rinse them under cold water to halt the cooking process. Set aside.
  2. Cook the Filet Mignon:

    • In a frying pan over medium-high heat, melt 1 tablespoon of butter.
    • Once the butter is hot, add the filets and cook for 3 minutes on each side for a nice sear.
    • Season the filets with salt and pepper, then continue cooking until desired doneness is reached (medium-rare takes approximately 7-8 minutes).
    • Add the mushrooms, remaining butter, red pepper, garlic, and parsley to the pan. Stir well.
  3. Prepare the Sauce:

    • Remove the cooked filets from the pan and set them aside or keep them warm in a 100ยฐF oven.
    • Increase the heat to high and pour in the white wine. Cook for 2-3 minutes.
    • Stir in the beef consomme and adjust the seasoning to taste.
    • In a small bowl, mix the cornstarch with water to form a slurry. Add this mixture to the sauce to thicken it.
  4. Final Touches:

    • Reheat the green beans and asparagus either in a steamer or by sautรฉing them in the remaining butter.
    • Arrange the filets on a serving platter, ladle the sauce over them, and garnish with the prepared vegetables.
