Salmone in Carpione with Julienne Vegetables

Ingredients:

Norwegian Salmon fillet 500g
Water 300ml
Dry white wine 120ml
White wine vinegar 80ml
Carrot ½
Red onions ½
Celery stalk 1
Black peppercorns to taste
Pink peppercorns to taste
Table salt to taste

Instructions:

  1. Prepare the Salmon:
    For the best results, use fresh Norwegian salmon. If you don’t have access to it, it’s recommended to freeze the salmon at -18°C (0°F) for at least 96 hours before using it in this recipe. After thawing, remove any bones from the fillet using a pair of kitchen tweezers. Cut the salmon into bite-sized pieces.

  2. Prepare the Vegetables:
    Peel and slice the onion into thin strips. Cut the celery stalk into half, and remove the outer stringy membrane with a vegetable peeler. Slice it into julienne strips. Peel and slice the carrot into thin matchstick-like pieces.

  3. Prepare the Marinade (Carpione):
    In a large bowl, combine the water, white wine, and white wine vinegar. Add a pinch of salt, and the black and pink peppercorns. Add the julienned carrot, sliced celery, and onion to the bowl. Mix well with a wooden spoon to ensure the vegetables are well-coated with the marinade ingredients.

  4. Marinate the Salmon:
    Place the salmon pieces into the prepared marinade. Stir gently to combine, making sure the salmon is fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 2 hours. During this time, the salmon will absorb the aromatic flavors of the marinade and the vegetables.

  5. Serve:
