Marinated Watermelon and Cheese Crostino Recipe

Category: Appetizers

Servings: 8

This refreshing and savory appetizer combines the sweetness of marinated watermelon with the creaminess of Caciocavallo cheese, all atop crispy toasted bread. It’s a light yet flavorful dish perfect for gatherings or as an enticing starter.

Ingredients

Ingredient Quantity
Watermelon (cocomero) 900g
Rustic Bread (Pane Casereccio) 8 slices
Caciocavallo Cheese 200g
Extra Virgin Olive Oil to taste
Apple Cider Vinegar 5g
Garlic ยฝ clove
Thyme 2 sprigs
Sage 4 leaves
Rosemary 1 sprig
Sichuan Peppercorns 1 tsp
Fine Salt to taste

Instructions

  1. Prepare the Watermelon:
Begin by slicing the watermelon into wedges, removing the rind to obtain 400g of flesh. Cut the watermelon into thin slices to make it easier to marinate.

  2. Marinate the Watermelon:
In a shallow dish, place the watermelon slices. Finely chop the thyme, sage, and rosemary. Add these aromatic herbs to the watermelon along with the thinly sliced garlic, apple cider vinegar, a pinch of salt, and Sichuan pepper. Toss gently to combine the flavors, ensuring the watermelon is evenly coated. Cover with plastic wrap and let it marinate for about 30 minutes to allow the flavors to meld.

  3. Toast the Bread:
While the watermelon marinates, heat a grill pan or skillet over medium-high heat. Toast the rustic bread slices on both sides until golden and crispy, which should take just a few minutes.

  4. Assemble the Crostino:
Once the bread is toasted, use a fine sieve to drain the marinated watermelon slices, removing any excess liquid. Place a few slices of Caciocavallo cheese onto each piece of warm toasted bread.

  5. Top with Watermelon:
Carefully arrange the marinated watermelon on top of the cheese. The watermelonโ€™s juicy sweetness and the richness of the cheese will create a delightful contrast.

  6. Serve Immediately:
Serve the crostini right away while the bread is still warm and crisp. This ensures the perfect texture combination of crunchy bread and tender, flavorful watermelon.

Tips for a Perfect Crostino:

  • Herb Variations: Feel free to experiment with other herbs like mint or basil for a slightly different flavor profile.
  • Cheese Options: If you canโ€™t find Caciocavallo, substitute with another semi-firm cheese like Provolone or even mozzarella for a creamier texture.
  • Make Ahead: Marinate the watermelon up to a day in advance and toast the bread just before serving to preserve the crispness.

This Marinated Watermelon and Cheese Crostino is an excellent choice for a light appetizer that balances both savory and sweet elements. Itโ€™s ideal for summer gatherings, offering a refreshing bite thatโ€™s full of vibrant flavors.
