Ingredients:

Ingredient Quantity
Fresh mushrooms 1 1/2 cups
Green onion 1/4 cup
Butter 4 tbsp
Salt to taste
Pepper to taste
Dry marsala 1/4 cup
Chicken broth 1/8 cup
Parsley 1/3 cup
Veal 8 slices

Instructions:

  1. Preparation:

    • Heat 2 tablespoons of butter in a 12-inch skillet over medium heat.
    • Add the fresh mushrooms and green onion to the skillet and cook until tender, approximately 3-4 minutes.
    • Once cooked, remove the mushroom mixture from the skillet and set aside.
  2. Prepare the Veal:

    • Cut the veal into 2 serving pieces and gently flatten each piece to approximately 1/8 inch thickness.
    • Season the veal slices with salt and pepper according to your taste preferences.
  3. Cook the Veal:

    • In the same skillet, add the remaining butter.
    • Once the butter is melted, add the veal slices to the skillet.
    • Cook the veal over medium-high heat for about 1 minute on each side, or until golden brown and cooked through.
    • Once cooked, transfer the veal slices to warm plates and set aside.
  4. Prepare the Marsala Sauce:

    • To the drippings left in the skillet, add the dry marsala and chicken broth.
    • Bring the mixture to a boil, then reduce the heat and let it simmer gently for 1 minute, stirring occasionally and scraping up any browned bits from the bottom of the skillet.
  5. Final Assembly:

    • Return the cooked mushroom mixture to the skillet.
    • Add the chopped parsley to the skillet and stir to combine with the sauce.
    • Allow the sauce to simmer for an additional minute, allowing the flavors to meld together.
  6. Serve and Enjoy:

    • Spoon the flavorful marsala sauce over the cooked veal slices.
    • Garnish with additional parsley if desired.
    • Serve immediately and savor every bite of this delicious Veal Scaloppine With Marsala For Two!
