Ingredients

For the Masala Chai:

For the Kulfi:

Custard powder 2 tablespoons
Condensed Milk 200 grams
Pistachios (chopped) 1/4 cup

For the Biscuit Crumble:

Marie Biscuit 10 biscuits
Butter (Salted) 1 inch (approx. 2 tablespoons)
Almond Meal (Badam Powder) 2 tablespoons

For the Bourbon Chocolate Syrup:

Dark Chocolate (70%) 100 grams
Fresh cream 50 grams
Bourbon As per your taste
Salt A dash

Instructions

Step 1: Prepare the Masala Chai

  1. Begin by preparing the masala chai mixture. In a mortar and pestle or a mixer grinder, grind together the cardamom, cinnamon stick, black peppercorns, cloves, and grated ginger into a fine powder.
  2. Pour 2 cups of water into a saucepan, bring it to a boil, and add the freshly ground spice mix. Stir to combine.
  3. Add the Assam tea leaves to the boiling water. Allow it to simmer for 1 minute, then add sugar and warm milk to taste. Continue to stir and then remove the saucepan from the heat.
  4. Strain the chai into a container and set aside to cool completely.

Step 2: Make the Kulfi

  1. In another saucepan, combine 2 cups of milk with 2 tablespoons of custard powder. Place it over medium heat, continuously stirring until the mixture thickens and reaches a custard-like consistency.
  2. Add the cooled masala chai mixture to the custard mixture, stirring constantly. Allow it to cook together for another 5 minutes.
  3. Once the mixture thickens to your desired consistency, stir in the chopped pistachios and remove from the heat. Let it cool to room temperature.
  4. After the kulfi mixture has cooled, blend in 200 grams of condensed milk, mixing thoroughly until the mixture becomes creamy and smooth.
  5. Pour the kulfi mixture into molds and freeze for at least 12 to 15 hours or until solid.

Step 3: Prepare the Biscuit Crumble

  1. Crush the Marie biscuits with a rolling pin until they turn into fine crumbs.
  2. Mix the almond meal into the biscuit crumbs, followed by the salted butter. Combine well, ensuring the mixture attains a sand-like texture.
  3. Spread the mixture evenly on a baking tray and bake at 180°C (350°F) for about 10 minutes, or until golden brown. Remove from the oven and allow it to cool.

Step 4: Make the Bourbon Chocolate Syrup

  1. For the syrup, melt 100 grams of dark chocolate using the double-boiling method or microwave in 20-second intervals, stirring between each.
  2. Once melted, remove the chocolate from the heat and stir in 50 grams of fresh cream, a dash of bourbon, and a pinch of salt. Mix until smooth.
  3. Set the syrup aside to cool completely in the fridge.

Step 5: Assemble and Serve

  1. To serve, place the biscuit crumble on a plate, then add the frozen kulfi on top.
  2. Drizzle the cooled bourbon chocolate syrup generously over the kulfi and garnish with some additional chopped pistachios for a delightful crunch.
