  1. Prepare the Mascarpone Filling: Begin by placing the mascarpone cheese in a large mixing bowl. Add the ground cinnamon to infuse a warm, spiced flavor into the cream. Drizzle in the rum to enhance the richness of the filling. If you don’t have a pastry bag, a small spoon will work just fine for filling the dates.

  2. Stuff the Dates: Take each date and carefully slice it open lengthwise, ensuring you remove the pit while keeping the date intact. Once all the dates are halved, use a spoon or pastry bag to fill each date with the mascarpone mixture.

  3. Add the Walnuts: Place half of a walnut on top of the mascarpone filling in each date. For precision, you can use kitchen tweezers to place the walnut gently into the mascarpone.

  4. Chill the Dates: Once all the dates are stuffed and garnished with walnuts, arrange them on a plate or tray. Place the stuffed dates in the refrigerator for approximately 2 hours. This will allow the mascarpone filling to firm up and the flavors to meld together.
