Instructions:

Step 1: Cook the Masoor Dal

To begin, wash the masoor dal thoroughly and add it to a pressure cooker. Add the following to the cooker:

  • Salt (to taste)
  • Turmeric powder (haldi) – 1/2 teaspoon
  • Water – 2 1/2 cups

Close the lid of the pressure cooker, place the weight on, and cook the dal for 2 whistles on medium heat. After the second whistle, reduce the heat to low and let it simmer for another 4 minutes. Turn off the heat, and allow the pressure to release naturally. Once the pressure is released, open the lid, and set the cooked dal aside.

Step 2: Prepare the Gassi Masala

While the dal is cooking, prepare the masala for the gassi curry. In a small frying pan, dry roast the coriander seeds and dry red chillies on medium heat until they are fragrant, about 2-3 minutes. Allow the roasted spices to cool completely.

Once cooled, transfer the roasted spices to a blender. Add the following:

  • Fresh grated coconut – 1/3 cup
  • Tamarind – 20 grams (soak in warm water for easier blending)
  • Garlic – 3 cloves

Add a little warm water to help blend everything into a smooth, thick paste. Set the gassi masala paste aside for later use.

Step 3: Combine the Dal and Masala

Add the freshly ground gassi masala paste into the cooked masoor dal. Stir well and bring the mixture to a brisk boil on medium heat. Let it cook for 3-4 minutes to allow the flavors to meld. At this stage, the consistency of the dal should be thick and gravy-like. If you prefer a slightly thinner curry, add a little water to adjust the consistency. Taste and adjust the salt and spice levels as needed.

Step 4: Prepare the Seasoning (Tadka)

In a small tadka pan or tempering pan, heat 1 teaspoon mustard seeds on medium heat. Once the mustard seeds begin to crackle, add 3 cloves of garlic (crushed or whole, depending on your preference). SautΓ© the garlic until it turns golden brown, about 2 minutes. If desired, you can also add curry leaves at this stage for an added burst of flavor.

Step 5: Pour the Tadka and Serve

Pour the hot seasoning (tadka) over the prepared Masoor Dal Gassi. The mustard seeds and garlic will infuse the curry with a delicious aroma and flavor. Stir gently to mix.

Serve the Masoor Dal Gassi hot with steamed rice, a dollop of ghee, and traditional accompaniments like Kadalai Manoli (a Mangalorean-style pickle) and Dhangar Pachadi (a coconut-based side dish).
