Matcha Cream Tart

Ingredients (For 6 servings)

Brown sugar 80g
Whole egg 55g
Matcha green tea powder 10g
Whole milk 500g
Egg yolks 570g
Sugar 50g
Cornstarch (cornflour) 50g
Acacia honey 10g
Blueberries To taste
Blackberries To taste
Fresh mint leaves For garnish

Instructions

  1. Prepare the Shortcrust Pastry
    Begin by making the shortcrust pastry. Place the cold butter cubes in the bowl of a food processor. Add the all-purpose flour, almond flour, and brown sugar. Pulse until the mixture resembles coarse breadcrumbs.
    Add the whole egg and continue to pulse until the dough starts to come together.
    Turn the dough out onto a lightly floured surface and knead it briefly until smooth. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  2. Make the Matcha Cream
    While the dough chills, prepare the matcha cream. In a saucepan, whisk together the milk, egg yolks, sugar, and cornstarch until smooth. Gently heat the mixture over low heat, stirring constantly.
    Once it begins to thicken, add the matcha powder and continue to stir until the cream reaches a thick, custard-like consistency.
    Remove from the heat and stir in the honey until well incorporated.
    Transfer the cream to a bowl, cover with plastic wrap directly on the surface to prevent a skin from forming, and let it cool.

  3. Prepare the Tart Shell
    Preheat your oven to 170°C (340°F) with the rack in the center.
    Remove the chilled dough from the fridge and roll it out on a lightly floured surface to a thickness of about ½ cm.
    Transfer the dough into a rectangular tart pan (35.5 x 10.5 cm), pressing it gently into the edges. Trim any excess dough using a knife.
    Prick the bottom of the tart shell with a fork to prevent it from puffing up during baking.
    Bake in the preheated oven for 15 minutes or until golden brown. Once baked, allow the tart shell to cool completely.

  4. Assemble the Tart
    Once the tart shell has cooled, take the matcha cream and stir it gently with a spatula to smooth it out.
    Transfer the cream to a piping bag and fill the tart shell with the matcha cream, smoothing the surface with a spatula or the back of a spoon.
    Garnish the tart with fresh blueberries, blackberries, and a few sprigs of mint for a refreshing touch.

  5. Serve and Enjoy
    Allow the tart to chill in the refrigerator for at least an hour before serving to let the flavors meld together. Once ready, slice and serve the Matcha Cream Tart to your guests.
