Salmon Fillets in Foil (Filetti di Salmone al Cartoccio)

Ingredients:

Red onions 2
Taggiasca olives 24

Extra virgin olive oil 4 tbsp

Instructions:

  1. Prep the Salmon: Begin by carefully removing any bones from the salmon fillets using a kitchen tweezer.
  2. Slice the Vegetables: Peel and finely slice the red onions. Cut the cherry tomatoes into thin rounds.
  3. Prepare the Foil and Parchment Paper: Lay out 4 sheets of aluminum foil on your work surface. Place a sheet of parchment paper on top of each piece of foil.
  4. Layer the Vegetables: Take one sheet of parchment paper and place a generous amount of sliced onions in the center. Sprinkle with a pinch of sea salt to season.
  5. Add the Salmon: Place one salmon fillet on top of the onions. Season the fillet with sea salt and black pepper to taste.
  6. Top with Olives and Oil: Scatter 6 Taggiasca olives on top of the salmon and drizzle with a little extra virgin olive oil for extra flavor.
  7. Wrap the Foil: Carefully fold the edges of the parchment paper over the salmon, sealing it tightly. Follow this by folding the aluminum foil around the parchment to create a secure parcel.
  8. Repeat for Remaining Fillets: Repeat steps 4 through 7 with the remaining 3 fillets of salmon.
  9. Bake the Salmon: Preheat your oven to 180°C (350°F). Place the foil parcels on a baking tray and transfer them to the oven. Bake for 20–25 minutes, or until the salmon is cooked through and flaky.
  10. Garnish and Serve: Once the salmon fillets are ready, carefully open the parcels, sprinkle with fresh parsley, and serve hot.
