Ingredients:

  • 3 large potatoes
  • 4 tablespoons olive oil
  • 1 1/2 cups crumbled feta cheese
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/2 teaspoon dried rosemary

Instructions:

Step Description
1 Preheat your oven to 400°F (200°C). Pierce the potatoes with a fork and bake for approximately 1 hour, or until tender.
2 Allow the potatoes to cool slightly, then cut them in half lengthwise. Gently scoop out the pulp, leaving about a 1/4-inch shell. Reserve the scooped-out pulp for another use.
3 Cut the potato skins in half lengthwise again, then slice them crosswise, resulting in 32 pieces in total. Brush the skins generously with olive oil.
4 Bake the oiled potato skins for 5 minutes to crisp them up.
5 In a bowl, combine the crumbled feta cheese, dried oregano, basil, and rosemary.
6 Remove the partially baked potato skins from the oven and evenly distribute the cheese mixture on top of each skin.
7 Drizzle a little more olive oil over the cheese-topped skins.
8 Set your oven to broil and place the potato skins back in the oven. Broil for 2-3 minutes, or until the cheese is melted and bubbly.
9 Remove from the oven and allow to cool slightly before serving.
