Ingredients:

  • 1 lamb shoulder
  • 1/3 cup olive oil
  • 1/3 cup lemon juice
  • 1/3 cup white wine
  • 2 onions
  • 2 tablespoons fresh parsley
  • 1 garlic clove
  • 1 bay leaf
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon thyme
  • 1/2 teaspoon basil
  • Salt and pepper to taste

Instructions:

Step Description
1 With a sharp knife, slice horizontally through lamb, stopping about 1 inch from the opposite edge.
2 Open the meat like a book and flatten with the flat side of a knife.
3 Trim any membrane and excess fat from the lamb.
4 Place the lamb in a heavy plastic bag and set it in a shallow dish.
5 For the marinade, combine olive oil, lemon juice, white wine, onions, parsley, garlic, bay leaf, rosemary, thyme, basil, and salt and pepper to taste in a bowl.
6 Pour the marinade over the lamb in the plastic bag, press out the air, and secure with a twist tie.
7 Marinate the lamb for at least 4 hours or overnight in the refrigerator.
8 Remove the lamb from the marinade, reserving the marinade.
9 Cook the lamb flat on a lightly greased grill over hot coals or on high setting, turning once and basting often with the reserved marinade, for about 20 minutes or until desired doneness.
10 To serve, slice the lamb across the grain into 1/2 inch thick slices.
