While the recipe itself doesn’t take long to prepare, I like to let the bean mixture sit for a bit to allow the flavors to meld, which enhances the overall taste experience.

2 tbsp Extra virgin olive oil
2 cloves Garlic
1/2 tsp Crushed red pepper flakes
2 tbsp Fresh basil leaves

6 slices Bread

Instructions:

  1. Preheat Grill Pan or Broiler:

    • Get your grill pan or broiler preheated to ensure it’s ready when you need it.
  2. Prepare the Bean Mixture:

    • In a bowl, gently combine the cannellini beans, extra virgin olive oil, balsamic vinegar, crushed red pepper flakes, basil leaves, and minced garlic.
    • Season with salt and pepper to taste.
    • Allow the mixture to sit for about half an hour if possible, to let the flavors meld.
  3. Prepare the Bread:

    • Warm a clove or two of chopped garlic in some olive oil to infuse the flavor. You can do this on the stovetop over very low heat or in the microwave for about 30 seconds.
    • Add a couple of shakes of salt and pepper to the garlic oil.
    • Brush the garlic oil evenly over the bread slices.
  4. Toast the Bread:

    • Place the bread slices under the broiler or on a grill pan for 3-5 minutes until slightly brown and crisp, or until grill marks appear.
  5. Assemble the Bruschetta:

    • Top the toasted bread slices with the prepared bean mixture.
    • Drizzle any extra balsamic vinegar or olive oil over the top for added flavor.
  6. Serve:

    • This delicious White Bean Bruschetta is best served immediately, alongside a tossed green salad for a complete meal experience.
