Ingredients:
- 1/2 cup white wine vinegar
- 1/4 cup sherry wine
- 3/4 teaspoon kosher salt
- 1/4 teaspoon coarse salt
- 1 teaspoon black peppercorns
- 1 bay leaf
- 1 hot chili pepper
- 1 head of garlic
- Fresh thyme and rosemary
Instructions:

1 | In a small nonreactive saucepan, combine the white wine vinegar, sherry wine, kosher salt, black peppercorns, bay leaf, and hot chili pepper, and bring to a boil over medium-high heat, stirring once or twice to dissolve the salt. |
2 | Reduce the heat to medium, add the garlic (peeled and separated into cloves), and simmer for about 30 seconds. |
3 | Remove the saucepan from the heat and add fresh thyme and rosemary. |
4 | Allow the mixture to cool to room temperature, uncovered. |
5 | Pour the pickling liquid into a jar with a nonreactive lid. |
6 | Cover tightly and let it stand at room temperature for at least a day before sampling one of the smaller cloves. |
7 | The flavor will improve steadily over the first few days as the liquid penetrates the garlic. |
8 | This pickle will keep, covered and refrigerated, for 2 months or more. |
