Description:

This Moussaka Stir-Fry combines the rich flavors of ground lamb (or beef), eggplant, and a savory tomato-based sauce into a hearty and satisfying dish. Despite its exotic name, it’s surprisingly easy to make and packs in a balanced mix of meat, vegetables, and dairy.

Ingredients:

  • 1 lb ground lamb or beef
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/2 cup beef or chicken broth
  • 1/4 cup tomato paste
  • 1/4 cup sour cream
  • 8 oz eggplants, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 1/4 cup frozen green peas
  • 2 tbsp olive oil
  • 1/2 cup crumbled feta cheese

Instructions:

  1. Prepare Meat Mixture:

    • In a bowl, combine ground lamb or beef with garlic powder, dried oregano, and black pepper. Mix well and set aside.
  2. Prepare Sauce:

    • In another bowl, whisk together beef or chicken broth, tomato paste, and sour cream until smooth. Set aside.
  3. Cook Meat:

    • Heat 1 tablespoon of olive oil in a Dutch oven over high heat until very hot. Add the meat mixture and stir-fry, breaking up the meat until it’s no longer pink, about 1 minute. Remove the meat and juices from the pot and set aside in a large bowl.
  4. Cook Vegetables:

    • In the same Dutch oven, heat 2 more tablespoons of olive oil. Add diced eggplants and stir-fry for 2-3 minutes until slightly softened. Add diced green bell pepper and stir-fry for another minute until the pepper is crisp-tender and the eggplant is also crisp-tender.
  5. Combine Ingredients:

    • Add the cooked vegetables to the bowl with the meat mixture.
  6. Cook Onion and Peas:

    • Add diced onion and frozen green peas to the Dutch oven. Stir-fry for about 1 minute until the peas are thawed.
  7. Thicken Sauce:

    • Pour the prepared broth mixture into the Dutch oven with the onion and peas. Bring to a boil and let it boil for 30 seconds until the sauce thickens slightly.
  8. Combine and Serve:

    • Return the meat and vegetable mixture to the pot. Add crumbled feta cheese and stir for about 1 minute until everything is evenly coated with the sauce.
  9. Serve Immediately:

    • Transfer the Moussaka Stir-Fry to serving plates and enjoy immediately while hot.
