  • 2 sprigs thyme
  • 4 cloves garlic, minced
  • 3 tablespoons vinegar
  • 24 cherry tomatoes
  • 2 peperoncino (hot peppers), chopped
  • 1 can (400g) whole tomatoes
  • 3 plum tomatoes, diced
  • 2 cuttlefish, cleaned and sliced
  • 1 cup dry white wine
  • 3 pounds sea bass fillets, cut into serving pieces

  • 12 razor clams
  • 6 large shrimp, peeled and deveined
  • 6 squid tubes, cleaned and sliced
  • 1/2 cup chopped Italian parsley
  • Salt and pepper to taste

Recipe Instructions:

  1. Sauté Aromatics: In a large stockpot over medium-high heat, add extra virgin olive oil, chopped celery, spring onions, marjoram, parsley, thyme, and minced garlic. Sauté until the onions begin to turn transparent, about 5 minutes.

  2. Add Tomatoes and Seafood: Stir in the vinegar, cherry tomatoes, chopped peperoncino, canned whole tomatoes, diced plum tomatoes, sliced cuttlefish, and dry white wine. Allow the mixture to come up to a simmer, then cook for 10 minutes.

  3. Cook Sea Bass: Gently add the sea bass fillets on top of the broth, pressing them down slightly. Let them cook for 5 minutes.

  4. Add Shellfish: Place the mussels, razor clams, shrimp, and squid on top of the broth and fish. Gently press them down with a large ladle, basting the shellfish with the hot broth.

  5. Simmer: Cover the stockpot with a lid and simmer for 2 to 3 minutes, or until the mussels and clams have opened and the shrimp and squid are cooked through.

  6. Season and Serve: Taste the broth and season with salt and pepper as needed. Carefully remove the seafood to a serving platter and sprinkle with chopped Italian parsley.
