  • 1 1/2 cups chopped tomatoes
  • 1/2 cup fresh lemon juice
  • 3 tablespoons chopped fresh parsley
  • 3 teaspoons dried oregano
  • Salt and pepper, to taste
  • 12 ounces angel hair pasta

Instructions:

Step Description
1 In a large skillet, heat olive oil over medium-high heat.
2 Add minced garlic and shrimp to the skillet, sauté for about 2 minutes until the shrimp start to turn pink.
3 Add the quartered artichoke hearts, crumbled feta cheese, chopped tomatoes, fresh lemon juice, chopped parsley, dried oregano, salt, and pepper to the skillet. Continue to sauté for an additional 2 minutes, allowing the flavors to meld together.
