Instructions

  1. Prepare the Tomatoes: Start by washing the cherry tomatoes. Cut each into 4 to 6 pieces, depending on the size of the tomatoes. Collect the chopped tomatoes in a colander placed inside a bowl, allowing them to drain for a few minutes. This will help remove excess water from the tomatoes.

  2. Prepare the Smoked Scamorza: While the tomatoes are draining, slice the smoked scamorza cheese into thin slices. Cut the slices into strips and then into small cubes, approximately 1.5 cm in size.

  3. Combine the Ingredients: Once the tomatoes have drained, transfer them to a bowl. Add the pitted taggiasca olives and the capers. Season with salt, pepper, and drizzle with extra virgin olive oil. Toss everything together to combine well.

  4. Prepare the Parcels: Cut 4 squares of parchment paper, large enough to form parcels for the ingredients. Divide the mixture of tomatoes, olives, and capers evenly among the four squares. Add a portion of scamorza cubes to each parcel.
