Instructions:

Step Description
1 In a heavy saucepan, place 20 cloves of garlic and cover them with olive oil. Slowly poach the garlic on the stove for about 4 minutes until they become soft and just slightly golden.

6 Immediately drain the broccoli and transfer it to the ice water to chill. Once cooled, drain it thoroughly.
7 Prepare the vinaigrette by mixing together the reserved garlic puree, olive oil, Dijon mustard, and finely chopped shallot.
8 In a large bowl, toss the blanched broccoli with the sliced scallions, croutons, feta cheese, sun-dried tomatoes, and the prepared vinaigrette.
9 Arrange the dressed broccoli on serving plates and garnish each portion with a few of the poached garlic cloves. Sprinkle some additional crumbled feta cheese on top for extra flavor.
