Instructions:

  1. Heat olive oil in a large pan over medium heat.

  2. Add sliced onions, capsicum, and mushrooms to the pan. Stir-fry until vegetables are tender and lightly browned, approximately 5-6 minutes.

  3. Meanwhile, parboil carrots, cauliflower florets, and Brussels sprouts until slightly tender.

  4. Once the onions, capsicum, and mushrooms are cooked, incorporate the parboiled carrots, cauliflower, and Brussels sprouts into the pan. Stir well to combine.

  5. In a separate pan, deep fry the sliced eggplant until golden brown and crispy.

  6. Transfer the fried eggplant to the vegetable mixture in the pan.
