As of March 21, 2005, I adopted this recipe and did some tweaking, resulting in a Briam that’s simply divine. This Greek vegetable casserole, perfect for summer, serves as a delightful main course, especially when you crave lighter fare. Briam’s versatility allows for various additions; for instance, artichoke hearts complement its flavors beautifully. Feel free to experiment with different vegetablesโolives or capers would surely add a delightful twist!

Ingredients:
- 1 zucchini
- 1 potato
- 1 eggplant
- 1 green pepper
- 1 onion
- 2 green onions
- 2 tomatoes
- 1 bunch parsley
- 6-8 minced garlic cloves
- Salt (to taste)
- Pepper (to taste)
- 1/4 cup olive oil
Instructions:

Preheat oven to 350ยฐF (175ยฐC).

Layer half of the ingredients in a casserole dish in the following order: zucchini, potato, eggplant, green pepper, onion, green onions, tomatoes, parsley, and minced garlic cloves. Season each layer with salt and pepper as you go. Repeat the layering process with the remaining half of the ingredients.

Top the layered vegetables with olive oil.

Bake the dish uncovered in the preheated oven for about 1 hour and 30 minutes, or until the top is crisp and the vegetables inside are soft and melt-in-your-mouth delicious!
