Ingredients:

4 Boneless skinless chicken breasts
8 Asparagus spears
4 slices Mozzarella cheese
2 tbsp Butter
2 tbsp Olive oil
3 cups Fresh mushrooms
2 cups Madeira wine
To taste Ground black pepper

Instructions:

  1. Preheat Skillet: Heat olive oil in a large skillet over medium heat.

  2. Prepare Chicken: Cover each chicken breast with plastic wrap and gently pound to flatten to about 1/4-inch thickness. Season each fillet with salt and pepper.

  3. Sauté Chicken: Sauté the chicken fillets in the skillet for 4 to 6 minutes per side until lightly browned. Remove from pan and wrap in foil to keep warm.

  4. Prepare Sauce: In the same skillet, add two tablespoons of olive oil. Sauté sliced mushrooms for about two minutes. Then, add Madeira wine, beef stock, butter, and ground black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes until sauce thickens and reduces.

  5. Cook Asparagus: While the sauce simmers, bring a medium saucepan of salted water to a boil. Cook asparagus for 3 to 5 minutes until tender. Transfer to a bowl of ice water to stop cooking.

  6. Broil Chicken: Preheat the oven to broil. Arrange cooked chicken fillets on a baking pan. Place two asparagus spears over each fillet and cover with a slice of mozzarella cheese. Broil for 3 to 4 minutes until cheese is lightly browned.

  7. Serve: Plate two chicken breasts per serving and spoon 3 to 4 tablespoons of Madeira sauce over each plate.
